8oz spiral pasta (whole wheat if you can find)
1lb ground beef, cooked (from Freezer)
1 can Corn, drained
1 can diced tomatoes, with juice
1 cup shredded cheddar cheese
2 Tbsp parsley
1 tsp. Salt
Cook pasta according to directions. Do not overcook, leave slightly firm. While pasta is cooking, combine remaining ingredients except cheese in a large saucepan. Stir gently over medium heat until cooked through. Drain pasta. Add cheese and pasta to skillet, mix thoroughly, and serve warm.

SWEET & SOUR ZUCCHINI WITH PEPPERS (SALAD)
Sweet & Sour Zucchini with Peppers
1 tbsp minced onion
7 small zucchini
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
Dressing: 1 cup sugar
2/3 cup cider vinegar
1/3 cup olive oil
1 tsp salt
3/4 tsp pepper
Combine vinegar and minced onion together in a large bowl. Add zucchini and peppers. In a small bowl, mix together all dressing ingredients. Pour over vegetables and toss to coat. Chill covered for at least 6 hours or overnight.
